Microwave radiation effect on food

I would like to know what the effect of microwave radiation has on food. For example, if say a health food shop was in close proximity to mobile phone masts, and assuming that there was a fairly high radiation level in the shop, would this have a detrimental effect on the food? Do you know whether there been any studies done on this?

There are no known effects of mobile phone mast type microwave radiation on food. There are no specific studies that we know of looking for this particular effect but there are thousands of studies looking at the effects of microwave exposure to all sorts of biological materials including food.

There is very little evidence that microwave cooking of food actually causes harm, though we do not recommend it. The Swiss (Hans Hertel et al) work that is widely reported (and miss reported) all over the internet has little substantiation in fact. There is some evidence that microwave warming of food in a microwave can change the structure of amino acids. and there are one or two other reports of minor effects - but these are after cooking the food using microwaves.

However, at the levels found in the environment (even in a shop close to a mast) there is no likelihood of any normal properties of food being affected. The levels are many thousands-of-fold to millions-of-fold below levels that can cause heating. The food is more likely to have been damaged by exposure to power-frequency and other fields (and chemicals) in its production, preparation and transport to the shop.
